Pumpkin Bake

This pumpkin bake recipe is a light and filling desert with only 90 calories per serving. Packed with fiber and low in sodium, it’s a delicious way to enjoy the flavors of Fall.

Ingredients

  • 2, 15-ounce cans of 100% pure pumpkin
  • 4 tablespoons of Splenda Brown Sugar Blend
  • 1/4 cup of light margarine
  • 1/4 teaspoon of ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/4 cup of chopped pecans, toasted

Directions

  1. Preheat your oven to 350 degrees Fahrenheit
  2. Combine pumpkin, 3 tablespoons of the Splenda Brown Sugar Blend, light margarine, cinnamon and nutmeg in a medium saucepan. Cook over medium heat, stirring occasionally, until mixture comes to a boil.
  3. Reduce heat to low; cook 1-2 minutes then pour mixture into an ungreased 1.5-quart casserole dish.
  4. In a small bowl, combine remaining 1 tablespoon of the Splenda Brown Sugar Blend and pecans. Sprinkle over pumpkin when ready.
  5. Bake 5-10 minutes or until browned.
