Ingredients
- 2, 15-ounce cans of 100% pure pumpkin
- 4 tablespoons of Splenda Brown Sugar Blend
- 1/4 cup of light margarine
- 1/4 teaspoon of ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/4 cup of chopped pecans, toasted
Directions
- Preheat your oven to 350 degrees Fahrenheit
- Combine pumpkin, 3 tablespoons of the Splenda Brown Sugar Blend, light margarine, cinnamon and nutmeg in a medium saucepan. Cook over medium heat, stirring occasionally, until mixture comes to a boil.
- Reduce heat to low; cook 1-2 minutes then pour mixture into an ungreased 1.5-quart casserole dish.
- In a small bowl, combine remaining 1 tablespoon of the Splenda Brown Sugar Blend and pecans. Sprinkle over pumpkin when ready.
- Bake 5-10 minutes or until browned.
