Baked Lemon Herb Tilapia

Ingredients
- 4 tilapia fillets (about 4-6 ounces each)
- 1 tablespoon of olive oil
- 1 lemon, sliced thin
- 1 teaspoon of dried thyme (or 1 tablespoon of fresh thyme)
- 1/2 teaspoon of dried oregano (or 1 teaspoon of fresh oregano)
- 1/4 teaspoon of garlic powder (or 1 clove of fresh minced garlic)
- Salt and black pepper to taste
- Optional garnish: fresh parsley, chopped
Directions
- Preheat the oven to 400°
- Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- Place the tilapia fillets on the prepared baking sheet and pat them dry with a paper towel.
- Drizzle the olive oil evenly over the fillets. After, sprinkle the thyme, oregano, garlic powder, salt and pepper over the fish.
- Place 2-3 thin slices of fresh lemon on top of each fillet.
- Bake for 12-15 minutes or until the fish is opaque throughout and flakes easily with a fork. Cooking time may vary depending on the thickness of the fillets.
- Optional: Garnish with fresh chopped parsley.
- Serve immediately with extra lemon wedges on the side.
