Spicy stuffed zucchini

Zucchini is a summer squash that is rich in color, fiber, and a good source of vitamin A, vitamin C and potassium.

Spicy stuffed zucchini

Ingredients 1 tablespoon olive oil 5 medium zucchini, cut in half lengthwise 1 pound lean ground turkey 2 teaspoons cumin 2 teaspoons onion powder 1 tablespoon chili powder ¼ teaspoon white pepper ½ teaspoon pepper ½ teaspoon salt ½ cup red bell pepper, diced ½ cup green bell pepper, diced ½ cup onion, diced ½ cup canned tomatoes and green chilies, drained 1 cup reduced-fat cheddar cheese, shredded ½ cup fresh cilantro, chopped Directions Preheat oven to 375° F. Cut zucchini in half lengthwise. Place on baking sheet and brush with olive oil. Bake 25 minutes. Remove from oven and allow to cool 10 minutes. Scoop out pulp from zucchini, dice it, and set it aside for use in filling. Meat filling preparation: Coat pan with non-stick cooking spray and set temperature to medium-low. Add ground turkey, cumin, onion powder, chili powder, salt, and ground pepper to skillet. Cook 5 minutes or until meat has browned. Add bell peppers, zucchini, onion, and tomatoes with green chilies. Cover and let simmer for 5 minutes. Distribute filling evenly over the zucchini. Sprinkle cheese on top and bake 10 minutes or until cheese is melted. Garnish with cilantro if desired.
