Ingredients

  • 6 hard-cooked boiled eggs, cooled and shelled
  • 3 tablespoons of grated Manchego or cheddar cheese
  • 1 to 2 tablespoons of mayonnaise
  • 2 tablespoons of snipped fresh chives
  • 1 fresh red chili, seeded and finely chopped
  • Salt and pepper
  • Lettuce leaves to serve

Directions

  1. Cut the eggs in half, lengthwise. Then, using a teaspoon, carefully scoop out the yolks into a fine strainer. Reserve the egg white halves.
  2. Rub the yolks through the strainer into a bowl and add the grated cheese, mayonnaise, chives and chili. Add salt and pepper to taste.
  3. Combine the mixture and spoon the filling into the egg white halves.
  4. Arrange a bed of lettuce on individual serving plates and top with the eggs. Cover and chill until you are ready to serve.
