Baja style fish tacos

You can use this easy recipe for lunch or dinner, and it’s healthy for everyone.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 4 tilapia fillets
  • 2 tsp fajita seasoning
  • 2 cups shredded cabbage
  • 1 tbsp fresh lime juice
  • ½ tsp salt
  • 3 tbsp fresh chopped cilantro
  • 8 (6-inch) corn tortillas
  • 2 ½ tsp fat-free sour cream
  • 1 medium, diced avocado
  • 2 tbsp Cholula original hot sauce

Directions

  1. Heat olive oil in a large sauté pan over medium heat.
  2. Season both sides of the tilapia using fajita seasoning and add the tilapia to the pan. Sauté each side for 3-5 minutes or until tilapia begins to flake easily. Flake tilapia into pieces using a fork.
  3. In a medium bowl, mix cabbage, cilantro, lime juice and salt. Set aside.
  4. Warm up tortillas.
  5. Assemble tacos by placing tilapia, cabbage mix, 1 tsp of sour cream and avocado in each tortilla. Top with hot sauce.
